TAGLIATELLE PASTA WITH BELL PEPPERS & SALAMI

Ok, salami may not be the healthy thing to eat, but…how good is it?! A few nights ago I was really craving for a yummy tasty dinner, so i thought to pair chopped salami with peppers. And pasta, tagliatelle pasta, which is a long flat type of egg pasta. Very nice indeed. The pieces of slightly fried salami gave to this dish a touch of crunchiness, tender stripes of pepers were like the ultimate final touch.

That’s it, no more blah-blah, time to chop salami.

INGREDIENTS

for 2 people

  • 150gr of tagliatelle egg pasta
  • 80gr of frozen peas (thawed)
  • 2 small bell pepers, 1 yellow and 1 red
  • 1 onion, sliced
  • 2 tomatos, chopped
  • 70gr of italian salami, thickly sliced and chopped
  • salt and pepper
  • 2 tbs of olive oil.

METHOD

  1. Take the white bits and seeds off the chopped bell peppers, cut them into stripes.
  2. Boil them untile they get pretty tender. Set aside.
  3. In a saucepan, drizzle some olive oil, add the sliced onion and cook it until it gets golden brown.
  4. Add the small pieces of italian salami.
  5. Stir well for a couple of minutes
  6. Add the cooked peppers, chopped tomatoes and peas.
  7. Add a glass of water and stir well untile the water evaporates.
  8. In the meantime cook the tagliatelle egg pasta, they usually take 7 minutes.
  9. When the pasta is ready, drain it and put it into the saucepan with the rest of the cooked ingredients.
  10. Stir well, add some salt and pepper and a couple of tablespoons of olive oil.

Of course you must love bell peppers and be able to digest them properly, if bell peppers are not your thing…this recipe is definitely not right for you, but you can pair chopped fried salami with some other veggie, why not?!

SPANISH TORTILLA | Thick & Tasty

TORTILLA SPAGNOLA ”  in italiano

I have lived in Gran Canaria, and after having published my recipes for Churros and Papas Arrugadas, here I am again with a traditiona Spanish dish: Tortilla de Papas – Spanish potatoe omelette. These are greatly available everywhere since it is a typical spanish dish, often eaten in a crunchy baguette with mayo.

I’ve learned how to make it while living in Maspalomas, it is rather simple but it take a while to cook and …yeas, pealing and slicing potatoes is not the funniest job ever.

However, the end result will be so yummy and tasty that you must try and make your own Papas Tortilla!

Vamonos!

INGREDIENTS

  • 270gr of potatoes
  • 1 onion, pealed and finely sliced
  • 3 whole eggs
  • 1 egg yolk
  • olive oil
  • salt and pepper

METHOD

  1. Peal the potatoes and cut them in thin slices.
  2. Dry them using kitchen paper.
  3. Drizzle a couple of spoons of olive oil into a non-stick frying pan.
  4. Add the onions and potatoes.
  5. Cook for 30 minutes over medium heat, stirring well from time to time.
  6. Keep cooking them untile the potatoes are tender.
  7. When cooked, set them aside for 15 minutes to cool down.
  8. In the mean time beat the eggs into a large bowl.
  9. Add the potatoes and onion, stirr well.
  10. Cook this mixture back into the frying pan for 25 minutes.
  11. Use a large spatula and turn the torlilla over.
  12. Make sure you take this step when the tortilla already looks pretty well cooked, not runny.
  13. Cook for 10 extra minutes.
  14. Done!

Very good when hot, but believe me it is so-ooo very delicious even cold! Now take a slice of good bread and have with bread and mayo, that’s the “naughty” way 🙂

Lemon and salmon is a combo I really like, as you may already know if you have tried my Salmon, Olive and Lemon Pasta. I did it again. I developed this new recipe using salmon, lemon and lots of good veggies. In particular I’ve used asparagus, which are often paired with salmon, so I though “let’s try them out with salmon in a risotto!”. And that’s how this recipe came up.
