Brownie Vanilla Plumcake!

Plumcake alla vaniglia e Brownie! in italiano

At Sleek there is one dessert in particular that we sell kind of easily, and that’s brownie. But you should know me by now, I love experimenting, so when I saw this recipe, which originally is for a cake, I decided to make a plumcake out of it, a butter plumcake with a thick brownie at the bottom.

Need I to say more? Am I convincig enough?!

I usually have troubles with plumcakes, they don’t always turn out that good, sometimes I overcook them, some other times they are still raw in the middle. But with this one, the cooking time is spot on and as you can see I did a marvellous job.

(Yes, I’m complimenting myself!)

INGREDIENTS

for a plumcake tin, 20x10cm

Brownie’s ingredients:

  • 160g of dark chocolate, chopped
    60g of butter
    65g of brown sugar
    1 Egg
  • 40g of flour

Butter Plumcake’s ingredients:

  • 130g of butter
    110g of sugar
    2 Eggs
    130g of flour
    4g of baking powder
  • 65ml of milk

METHOD

  1. Place the chopped dark chocolate in a bowl.
  2. Melt the butter in the microwave and pour the dark chocolate over
  3. Stir gently until the chocolate has melted with the butter.
  4. Add in the egg and the brown sugar.
  5. Using a whicker, whisk vigorously for 2-3 minutes.
  6. Line the plumcake tin with parchment papar and pour the brownie butter in.
  7. Bake in a pre-heated over al 170° for 15 minutes.
  8. In the meantime melt the butter (130g) and pour it into the bowl of your standing mixer.
  9. Add in the sugar, the eggs, the milk and whisk for 3-4 minutes.
  10. Add in the flour and the baking soda.
  11. Set aside till the brownie is ready.
    After 15 minute take the tin out of the oven and pour the plumcake batter over the brownie, place the tin back into the oven and bake for 50 minutes.
  12. Always remember to check if it is cooked properly.

Let chill down and have it for your afternoon break with a good cup of coffee!
It is simply delicious, the brownie bottom melts into your mouth as well as the butter plumcake.

Try and add halzelnuts to the brownie batter if you wish to, it is a nice way to give extra taste to this amazing fluffy plumcake!
