“Pasta con Salmone, Olive nere e Limone” in italiano

As I’ve mentioned it to you while telling you about my Pasta with broccoli and feta cheese recipe, I’m not that much into pasta, I like it when I can make it with unusual condiments.

And that’s exactly what I’ve tried to make with this recipe, tried to find a few ingredients that could go very well together, a fresh flavour like salmon and a more “strong” one: black olives.

INGREDIENTS

for 2 people

  • 180g of pasta
  • 100g of frozen peas
  • 240 of smoked salmon
  • 40g of black olives
  • 5 tbs of extravirging olive oil
  • 180g of greek yogurt
  • 1 lemon – the juice
  • 1 lemon – the zest
  • 1 pinch of salt
  • 1 pinch of black pepper

METHOD

  1. Bring a pot of water to a boil and cook the pasta. Dont forgert the salt in the water!(see box for cooking time)
  2. Take another pot of water, bring to a boil and boil the peasfor 8-10 minutes. Drain.
  3. In the meat time stir the lemon jiuce and zest into the greek yogurt and leave it aside.
  4. When the pasta is ready and drained, put it back into the pot with the peas.
  5. Add in the shredded smoked salmon and the black olives
  6. stir a little, the salmon with be cook in a couple of minutes even if the heat is OFF.
  7. Add in the lemon-greek yogurt, salt and pepper and the olive oil.
  8. Give it all a final stir and serve.

 

It has a very nice flavour and of course you can have it cold if you wish to, like in a cold-pasta-salad. Salmon and lemon are nice and fresh combination.
